With all these amazing outdoor activities to do, you should make sure you have enough energy. These energy bites are perfect if you need a pick me up snack along your camping adventures. They have the carbs, fat, and a little bit of protein to give you the energy boost you need. Keep in mind, that when you’re doing these outdoor activities, don’t just rely on snacks for your energy. Although these bites will help, they are not a meal. Make sure to drink enough water and eat a good meal before you venture out.   • ½ cup almonds
  • 4 Medjool datespitted
  • ¼ cup dried cherries
  • ¼ cup shredded unsweetened coconut
  • 2 tablespoons hulled hemp seeds
  • 2 tablespoons chopped dark chocolate(1/2 oz)
  • Pinch of salt

INSTRUCTIONS

  • Soak the almonds in water for 20 minutes. If your dates are on the dry side, you may want to soak them for a few minutes as well. Drain and rinse, then add to the bowl of a food processor along with the pitted dates, cherries, coconut, hemp seeds, chocolate, and salt.ingredients-for-cherry-garcia-energy-bites-3
  • Give the ingredients a whirr in the food processor until the mix becomes a crumbly dough. You may need to scrape down the sides a few times.
  • Scoop out enough dough to roll into a 1.5” ball, pressing the mix together between your palms to help it stick together, then rolling into a ball. Repeat with the rest of the dough to make 9 balls.
  • Store in an airtight container in the fridge until ready to eat.
