Campfire Stew

Campfire stew

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 (15-ounce) can corn kernels, drained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 cups beef broth

Instructions:

  1. Heat the olive oil in a large Dutch oven over a campfire. Add the onion and cook until softened, about 5 minutes.
  2. Add the garlic and cook for 1 minute more.
  3. Add the ground beef and cook until browned, breaking it up with a spoon.
  4. Drain off any excess fat.
  5. Stir in the diced tomatoes, kidney beans, corn kernels, oregano, salt, and pepper.
  6. Pour in the beef broth and bring to a boil.
  7. Reduce heat and simmer for 30 minutes, or until the stew has thickened.
  8. Serve with crusty bread or crackers.

Tips:

  • For a richer flavor, use a combination of ground beef and ground sausage.
  • Add your favorite vegetables to the stew, such as potatoes, carrots, or celery.
  • If you don’t have a Dutch oven, you can use a large pot.
  • Serve the stew with a dollop of sour cream or a sprinkle of grated cheese.
