Cowboy Stew

Cowboy Ragu 

Ingredients:

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can corn, drained
  • 1 (14.5-ounce) can beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. In a large Dutch oven or campfire pot, brown the ground beef over medium heat. Drain off any excess grease.
  2. Add the onion, garlic, and green pepper to the pot and cook until softened, about 5 minutes.
  3. Stir in the diced tomatoes, kidney beans, black beans, corn, beef broth, chili powder, cumin, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the stew has thickened.

Tips:

  • Best served with shredded cheese, sour cream, and crispy onions.
  • Substitute ground beef with chopped steak or venison.
  • Add tomato sauce to thicken stew if desired.
